Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Good ripe tomatoes
Provide the main body, sweetness and tomato flavor of the ketchup.
White wine or cider vinegar
Adds acidity that gives the ketchup its tang and helps preserve it.
Coarse sea salt
Seasons the sauce and helps draw out flavor during long simmering.
Ground mustard
Adds sharp, pungent flavor that balances the sweetness of the tomatoes.

The step that matters

Simmer slowly for 4 hours. A long, gentle simmer evaporates water and concentrates the tomato flavor and thickness. Too much heat can scorch the sugars in the tomatoes and make the sauce taste burnt.

Swap the tomato

How well each one fits the dish's main ingredients (mustard, pepper, allspice, clove, white wine):

  1. Horseradishfits better
  2. Shallotfits better
  3. Capsicumfits better
  4. Tomatothe original

Fit is the average pairing score against mustard, pepper, allspice, clove, white wine. Candidates are from the same food group and used in at least 100 recipes.
