What each ingredient does

Cucumbers
Form the main body of the pickle, whose texture firms and crisps during brining.
Fine salt
Draws water out of the cucumbers and seasons them, firming their texture for pickling.
Vinegar
Adds acidity that sharpens flavour and helps preserve the cucumbers.

The step that matters

Brining the cucumbers. Salt drawn into the cucumbers in boiling-water brine removes moisture and firms the flesh. Letting them stand for the full 48 hours lets the salt work through the cucumbers, so they stay crisp rather than soft once they are packed and covered in vinegar.
