Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green tomatoes
Form the bulk of the pickle and give it its tart, firm body.
Coarse sea salt
Draws water out of the vegetables so they stay crisp and absorb less liquid.
Vinegar
Acidifies the mixture, preserving it and giving the pickle its sharp flavour.
Sugar
Balances the sharpness of the vinegar with sweetness.
Mustard seed
Adds pungent, toasty flavour and a bit of texture to the pickle.

The step that matters

Draining after the salt and the vinegar. Salt and vinegar pull water out of the vegetables, and thorough draining keeps the pickle from diluting and becoming soft. Skipping or rushing the drains leaves excess moisture that weakens the texture and shelf life.

Swap the tomato

How well each one fits the dish's main ingredients (onion, horseradish, pepper, vinegar, sugar, allspice, clove):

  1. Mustardfits better
  2. Shallotfits better
  3. Turnipfits better
  4. Tomatothe original

Fit is the average pairing score against onion, horseradish, pepper, vinegar, sugar, allspice, clove. Candidates are from the same food group and used in at least 100 recipes.
