What each ingredient does

Green tomatoes
Form the bulk of the pickle and firm up as the salt draws out their moisture.
Brown sugar
Adds sweetness and balances the sharp acidity of the vinegar.
Vinegar
Provides the acidity that preserves the pickles and gives them their tang.
Onions
Add savoury flavour and moisture to the pickle mixture.
Ground mustard
Adds pungent, earthy flavour that deepens the sweet-sour balance.

The step that matters

Drain the salted vegetables thoroughly. Salt draws water out of the tomatoes and onions overnight. If they are not drained well, the excess liquid dilutes the vinegar syrup and can leave the pickles watery and less well preserved.

Swap the tomato
