Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable gel as it cools.
Egg yolks
Thicken the mixture into a rich, smooth custard as they heat.
Milk
Forms the liquid base that carries the chocolate and sets with the gelatine.
Chocolate
Gives the dessert its chocolate flavour and deep colour.
Sugar
Sweetens the custard and balances the bitterness of the chocolate.

The step that matters

Stir briskly for 3 minutes, then remove from heat. Egg yolks thicken as they heat but can scramble if overheated. Constant stirring spreads the heat evenly, and removing the pan at the right moment keeps the custard smooth before straining.
