What each ingredient does

Rhubarb
Provides the tart flavor and the pectin-free fruit body that softens into the jam.
Sugar
Draws water out of the rhubarb to form syrup and sweetens while helping the jam set.

The step that matters

Boiling the thickened syrup before adding the rhubarb. The syrup must be boiled until it visibly thickens so that the sugar concentration is high enough for the jam to set. Adding fruit too early leaves the mixture thin and watery, and it may not gel properly when cooled.
