Why it works: Potato and sugar are a kitchen classic. They rank in the top 30% of all ingredient pairs, and cooks put them together in 3,032 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓

Good Yeast

Ingredients

Directions

Prepare the starter

  1. Boil the water with the hops for a few minutes.

  2. Strain the hot mixture over the grated potatoes, stirring until it thickens like starch.

  3. Add the sugar and coarse sea salt, then let it cool.

  4. Once cool, stir in the yeast.

  5. Let it stand until a thick foam rises on top.

Use

  1. Use 1 coffee cup of this yeast for 6 loaves of bread.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raw potatoes
Grated potatoes release starch that thickens the mixture and feeds the yeast.
Hops
Hops are steeped in the water to add a bitter, aromatic flavour to the starter.
Sugar
Sugar provides food for the yeast, helping it grow and produce foam.
Good yeast
Live yeast is the leavening agent that starts fermentation and makes the starter foam.

The step that matters

Let it stand until a thick foam rises on top. The foam shows the yeast is active and fermenting. Using the starter before it foams may give bread that rises poorly, since the yeast has not multiplied enough to leaven the dough.

Swap the potato

How well each one fits the dish's main ingredients (hops, sugar):

  1. Mustardfits better
  2. Cucumberfits about as well
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against hops, sugar. Candidates are from the same food group and used in at least 100 recipes.
