Strawberky Shortcake

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the shortcake

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix flour, baking powder, and salt. Cut in butter until the mixture resembles coarse crumbs.

  3. Stir in milk until just combined.

  4. Divide the dough into two equal portions and shape into rounds.

  5. Bake in two greased tins for 15-20 minutes until golden.

Assemble

  1. Mix strawberries with sugar and let sit to release juices.

  2. Once the shortcakes are cool, slice them in half.

  3. Butter the inside of each shortcake and layer with strawberries.

  4. Top with the remaining strawberries and finish with charlotte russe or whipped cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Forms the structure that holds the shortcake together as it bakes.
Baking powder
Releases gas during baking so the shortcakes rise and turn light.
Unsalted butter
Cut into the flour to create tender, flaky layers and rich flavor.
Milk
Hydrates the flour to form a soft dough and adds tenderness and browning.
Strawberries
Provide fresh fruit flavor and juice that soaks into the shortcake.
Granulated sugar
Sweetens the berries and draws out their juices as it sits.

The step that matters

Stir in milk until just combined. Overmixing once liquid is added develops gluten, which makes the shortcake tough instead of tender. Stop as soon as no dry flour remains.
