Ingredients
- 1 cup dried split peas
- 2½ quarts cold water
- 1 pint milk
- ½ onion, chopped
- 3 tablespoons butter
- 2 tablespoons flour
- 1½ teaspoons salt
- ⅛ teaspoon pepper
- 2-inch cube fat salt pork

Pick over the peas and soak them for several hours, then drain.

In a large pot, add the cold water, pork, and onion.

Simmer for 3 to 4 hours or until the peas are soft.

Rub the mixture through a sieve.

In a separate pan, cook the butter and flour together, then add to the soup.

Season with salt and pepper, and dilute with milk, adding more if necessary.
