Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Prepare the chicken by stewing, cooling, and cutting it fine.

Make the sauce

  1. In a saucepan, melt the butter and whisk in the flour to create a roux.

  2. Gradually add the sweet milk and sweet cream, stirring until smooth.

Combine and bake

  1. Add the mushrooms and lemon juice, then mix with the chicken.

  2. Transfer the mixture to a baking dish, cover with cracker crumbs.

  3. Bake at 400°F (200°C) for 20 minutes.

What each ingredient does

Chicken
Provides the bulk and protein that make up the body of the dish.
Butter
Enriches the sauce and carries flavour through the roux.
Flour
Thickens the milk and cream into a smooth, creamy sauce.
Sweet milk
Forms the liquid base of the sauce, giving it a soft, creamy body.
Sweet cream
Adds richness and a silkier texture to the sauce.
Mushrooms
Add earthy flavour and a tender, savoury bite.

The step that matters

Whisking the milk into the roux. Adding liquid too quickly or without steady stirring lets flour clump instead of dissolving, leaving lumps in the sauce. Stirring gradually keeps the starch evenly dispersed so the sauce thickens smoothly as it heats.

Swap the lemon
