What each ingredient does

Round steak
Forms the outer wrap that holds the filling and becomes tender during slow braising.
Chopped beef
Adds savory, meaty filling that stays moist during the long bake.
Tomatoes
Provide acidity and liquid that keep the roll moist and build the sauce.
Olives
Add salty, briny flavor that contrasts with the rich beef.

The step that matters

Roll up the steak tightly and tie it with kitchen twine. A loose roll can open during baking, letting the filling escape and the meat cook unevenly. Tight rolling and secure tying keep the layers together while the connective tissue in the steak slowly softens.

Swap the onion

How well each one fits the dish's main ingredients (beef, pepper, olive, tomato):

  1. Capsicumfits better
  2. Potatofits better
  3. Eggplantfits better
  4. Onionthe original

Fit is the average pairing score against beef, pepper, olive, tomato. Candidates are from the same food group and used in at least 100 recipes.
