Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the cauliflower

  1. Remove leaves and stalk from the cauliflower and separate it into flowerets.

  2. Soak the flowerets in cold water for 30 minutes.

  3. Cook the cauliflower in boiling salted water for 20 minutes or until soft.

  4. Drain the cauliflower and set aside.

Make the cheese sauce

  1. In a saucepan, melt 3 tablespoons of butter, then stir in 3 tablespoons of flour to make a roux.

  2. Gradually add 1½ cups of milk, stirring until the sauce thickens.

  3. Stir in ½ cup of grated cheese until melted.

Bake and serve

  1. Pour the cheese sauce over the cauliflower in a buttered baking dish.

  2. Sprinkle the top with buttered crumbs.

  3. Bake in a hot oven at 400°F (200°C) until the crumbs are browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the bulk of the dish and becomes tender when boiled.
Flour
Thickens the butter and milk into a smooth sauce.
Butter
Enriches the roux and adds richness to the sauce and crumbs.
Milk
Forms the liquid base of the sauce, which thickens as it heats.
Grated cheese
Melts into the sauce to add savory flavor and creaminess.

The step that matters

Thickening the sauce. Flour must be cooked in the melted butter and milk added gradually while stirring, so the starch swells evenly and the sauce thickens without lumps.
