Spinach in Croustades

Ingredients

Directions

  1. Wash the spinach thoroughly in plenty of water, changing the water frequently to remove grit.

  2. Cook the spinach covered in the water that clings to the leaves, turning occasionally to prevent burning.

  3. Once tender, chop the spinach and season with salt and pepper. Cook uncovered to absorb excess liquid.

  4. Cut the stale bread into diamonds, squares, or circles. Dip the sides (except the top) in melted butter.

  5. Toast the bread in a hot pan until golden brown. Remove crumbs and fill with the cooked spinach.

  6. Mix in chopped hard boiled eggs and garnish with pressed white and yolk through a sieve.
