Why it works: Sauce and sugar match in chemistry and in kitchens. They rank in the top 13% of all ingredient pairs, and cooks put them together in 5,147 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Apple Sauce

Ingredients

Directions

  1. For whole pieces, cook sweet apples in boiling water with dissolved sugar to sweeten the sauce.

  2. For a smooth sauce, cook sour apples in cold water and add sugar only after the apples are soft.

  3. Wash apples thoroughly, discard decayed or wormy parts, and boil parings and cores to make juice for jelly.
