Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the chestnuts

  1. Cut a gash in one side of each chestnut.

  2. Shake the chestnuts in a pan of hot butter for 1-2 minutes.

  3. Bake the chestnuts in a 400°F (200°C) oven for 5 minutes.

  4. Remove the shells and inner skin from the chestnuts.

  5. Cook the chestnuts in boiling salted water until tender, then drain.

  6. Pass the chestnuts through a ricer.

Make the dressing

  1. Mix in ½ cup of butter, 1 teaspoon of salt, a dash of pepper, 2 cups of moistened bread crumbs, and a drop or two of onion juice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Provide the main bulk and starchy, soft texture of the dressing.
Butter
Adds fat and richness, coating the chestnuts and carrying flavor.
Bread crumbs
Absorb moisture and give the mixture body so it holds together.

The step that matters

Cook the chestnuts until tender. Chestnuts must be fully softened before ricing; undercooked pieces stay hard and make the dressing grainy and uneven.

Swap the chestnut

How well each one fits the dish's main ingredients (butter, pepper, bread, onion):
