What each ingredient does

Gelatin
Sets the liquid into a firm, sliceable salad that holds its shape.
Vinegar
Adds acidity that sharpens the flavour and balances the sugar.
Sugar
Adds sweetness to balance the vinegar and lemon juice.
Celery
Adds crisp texture that stays firm within the set gelatin.
Cabbage
Adds crunchy texture and bulk to the set salad.

The step that matters

Adding the remaining ingredients at the right point. Gelatin must be partly set but still fluid. If it is too liquid, the celery, cabbage and peppers sink to the bottom; if it has set fully, they will not distribute evenly through the salad.

Swap the cabbage

How well each one fits the dish's main ingredients (vinegar, lemon, sugar, celery, pepper):

  1. Mustardfits better
  2. Capsicumfits better
  3. Carrotfits better
  4. Cabbagethe original

Fit is the average pairing score against vinegar, lemon, sugar, celery, pepper. Candidates are from the same food group and used in at least 100 recipes.
