What each ingredient does

Tomatoes
Provide the main body and flavour of the jelly.
Gelatin
Sets the strained tomato liquid into a firm, sliceable jelly.
Sugar
Balances the acidity of the tomatoes with sweetness.

The step that matters

Soak the gelatin in cold water before adding it. Gelatin must hydrate in cold water first so it dissolves evenly into the warm mixture. Added dry or lumpy, it can leave clumps and set unevenly.

Swap the onion

How well each one fits the dish's main ingredients (tomato, sugar, sauce, pepper, mustard, gelatin, lettuce):

  1. Capsicumfits better
  2. Horseradishfits better
  3. Beetrootfits better
