Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cut a slice from the smooth ends of the tomatoes and scoop out the seeds and soft pulp.

Fill and bake

  1. Sprinkle the inside of each tomato with salt, pepper, butter, and toasted bread crumbs.

  2. Break an egg into each tomato, add more seasoning and toasted crumbs.

  3. Bake in the oven for 25 to 30 minutes.

What each ingredient does

Eggs
Set as they bake, forming a soft, creamy filling inside the tomato.
Large smooth tomatoes
Act as edible cups that hold the egg and soften as they bake.
Butter
Adds richness and moisture to the crumbs and seasoning inside the tomato.
Toasted bread crumbs
Absorb juices and add a light texture around the baked egg.

The step that matters

Break an egg into each tomato. Egg whites set at lower heat than the tomato flesh softens, so a yolk left whole may stay runny while the white firms. Keep each yolk intact and watch the bake time to get a set white with a soft yolk.

Swap the tomato

How well each one fits the dish's main ingredients (pepper, butter, bread, egg):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Chivefits about as well
  4. Tomatothe original

Fit is the average pairing score against pepper, butter, bread, egg. Candidates are from the same food group and used in at least 100 recipes.
