Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the stuffing

  1. Boil the potatoes until tender, then mash them.

  2. Season the mashed potatoes with salt, pepper, butter, and onion juice.

Stuff and bake

  1. Stuff the trout with the seasoned mashed potatoes and sprinkle the outside with salt and pepper.

  2. Place the trout in a roasting pan with 2 tablespoons of butter, the tomatoes, and water.

  3. Bake at 400°F (200°C) for 50 minutes.

  4. Serve with the gravy and garnish with sliced hard-boiled eggs.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Trout
Main protein that cooks gently in the oven and becomes flaky and tender.
Potatoes
Mashed starch that binds the stuffing and keeps the inside moist and soft.
Butter
Adds richness and fat that carries flavor and helps the fish stay moist.
Tomatoes
Release juice into the pan, creating a moist, lightly acidic liquid around the fish.
Onion juice
Adds a sharp, aromatic onion flavor to the mashed potato stuffing.

The step that matters

Baking the stuffed trout. Fish proteins set and dry out quickly once cooked through, so timing matters. The water and tomato juices in the pan create steam that helps keep the flesh moist during the 50 minutes in the oven.

Swap the tomato

How well each one fits the dish's main ingredients (potato, onion, butter, pepper):

  1. Chivefits better
  2. Capsicumfits better
  3. Carrotfits about as well
  4. Tomatothe original

Fit is the average pairing score against potato, onion, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
