Broiled Halibut Steak

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Soak the halibut steaks in a mixture of coarse sea salt and water for 30 minutes.

  2. Marinate the steaks in equal parts olive oil and lemon juice for another 30 minutes.

  3. Wipe the steaks dry and broil them, turning carefully twice.

  4. Place the steaks on a hot platter and spread with a sauce made of butter, lemon juice, and minced parsley, beaten to a cream.

  5. Set the platter in the oven at 400°F (200°C) for 1 minute and serve.
