Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, mix the veal, pork, eggs, salt, onion, green pepper, cream, and rolled crackers until well combined.

  3. Divide the mixture into two small bread tins.

Bake

  1. Top each loaf with slices of bacon and place a bay leaf on each.

  2. Bake for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main meaty body and structure of the loaf.
Pork
Adds fat that keeps the loaf moist and tender as it cooks.
Eggs
Bind the mixture so the loaf holds its shape when sliced.
Cream
Adds moisture that keeps the loaf from drying out during baking.
Crackers
Soak up liquid and help bind the ground meat together.

The step that matters

Mixing the meat with the other ingredients. Mixing until just well combined keeps the texture tender; overworking ground meat develops a firm, rubbery bind. Even distribution of the cream and eggs keeps each slice moist and evenly set.

Swap the onion

How well each one fits the dish's main ingredients (veal, pork, egg, pepper, cream):

  1. Capsicumfits better
  2. Potatofits better
  3. Asparagusfits about as well
  4. Onionthe original

Fit is the average pairing score against veal, pork, egg, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
