Why it works: Walnut and wheat match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 246 recipes. Both carry 1-hexanal, which smells fruit. The science ↓

Layer Sandwiches

Ingredients

Directions

Prepare the fillings

  1. Mix the chopped ham with sweet cream until it reaches a spreadable consistency.

  2. Combine the grated walnuts with enough salad dressing to form a smooth paste.

  3. Remove the crusts from the wheat bread and cut it into thin slices.

Layer and press

  1. Spread one slice of bread with the ham mixture, then place another slice on top.

  2. Spread the second slice with the nut mixture, then add another slice of bread.

  3. Continue alternating layers of ham and nut mixtures until you have six slices stacked.

  4. For additional layers, repeat the process, ensuring no more than six slices in each stack.

  5. Wet a napkin in warm water, wring it out, and spread it on a platter.

  6. Place the stacked sandwiches on the napkin, cover them, and place a board on top.

  7. Add a heavy weight or flat iron on top of the board and let it sit for about ten hours.

Serve

  1. When ready to serve, slice each stack of bread into one-inch thick pieces.

What each ingredient does

Cold boiled ham
Provides the savory, meaty filling that forms the main flavor of each layer.
Walnut meats
Adds a rich, slightly bitter nutty flavor and a firm texture to the filling.
Wheat bread
Forms the thin slices that hold the fillings and are compressed into a set stack.
Sweet cream
Adds fat and moisture so the ham mixture becomes soft and spreadable.
Salad dressing
Binds the grated walnuts into a smooth paste that spreads evenly between slices.

The step that matters

Pressing the stacks for about ten hours. Long, even pressure squeezes out air and moisture so the bread softens and the layers bond into a compact stack that slices cleanly. Uneven or insufficient weight can leave gaps and crumbly slices.
