Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet potatoes
Form the main body of the croquette, giving a soft, moist interior.
Butter
Adds fat for richness and a smoother, more tender texture.
Egg yolk
Binds the mashed mixture so the cylinders hold their shape.
Bread crumbs
Form a crisp outer coating that browns during frying.
Beaten egg
Helps the bread crumbs adhere to the shaped cylinders.

The step that matters

Frying in deep hot fat. If the fat is not hot enough, the coating absorbs oil and turns greasy before it browns. Hot fat seals the crumb crust quickly, keeping the inside moist and the outside crisp.
