What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable base that holds the vegetables in suspension.
Eggs
Thicken the dressing as they cook gently, giving it a smooth, rich body.
Vinegar
Adds acidity that sharpens the flavour and balances the sugar.
Whipped cream
Folded in when cold, it lightens the dressing and adds a soft, airy texture.
Celery
Adds crisp texture that contrasts with the soft, set gelatin.

The step that matters

Adding the vegetables at the right moment. Add cabbage, celery and red peppers only when the gelatin begins to set around the edges. If added too early, the pieces sink; if too late, they will not stay suspended in the set gelatin.

Swap the cabbage

How well each one fits the dish's main ingredients (vinegar, sugar, lemon, celery, pepper, lettuce, egg):

  1. Mustardfits better
  2. Capsicumfits better
  3. Spinachfits better
  4. Cabbagethe original

Fit is the average pairing score against vinegar, sugar, lemon, celery, pepper, lettuce, egg. Candidates are from the same food group and used in at least 100 recipes.
