Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rye flour
Provides the dense, earthy structure characteristic of rye bread.
Wheat flour
Adds gluten to give the dough more elasticity and lift than rye alone.
Yeast (in the method)
Produces carbon dioxide that makes the sponge and dough rise.
Milk
Adds richness and softness to the crumb and helps browning on the crust.

The step that matters

Let the sponge become full of bubbles before adding the salt and remaining flour. Fermenting the sponge first lets the yeast get active before salt slows it down, so the dough rises well and develops flavor.

Swap the caraway

How well each one fits the dish's main ingredients (milk, sugar, rye, flour, wheat, egg):

  1. Cinnamonfits better
  2. Carawaythe original
  3. Nutmegfits about as well
  4. Turmericfits less well

Fit is the average pairing score against milk, sugar, rye, flour, wheat, egg. Candidates are from the same food group and used in at least 100 recipes.
