Ingredients

  • 1½ cups flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 1 tablespoon butter
  • 1 beaten egg
  • milk (enough to make a soft dough)
  • strawberries (cut in half and sweetened)
  • whipped cream
  • whole strawberries (for garnish)

Directions

1

Preheat the oven to 400°F (200°C).

2

In a mixing bowl, sift together the flour, baking powder, salt, and sugar.

3

Add the butter and work it into the flour mixture as you would for a pie crust.

4

Stir in the beaten egg and enough milk to form a soft dough.

5

Press the dough into a well-buttered cake tin and brush the top with melted butter.

6

Bake for 20 minutes or until golden.

7

Once baked, cut the cake in half with a long, sharp knife.

8

Spread the bottom half liberally with sweetened strawberries.

9

Place the top layer on and cover with more strawberries and whipped cream.

10

Garnish with a few whole strawberries.
