Graham Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cake

  1. Cream the butter and sugar together until light and fluffy.

  2. Add the eggs one at a time, mixing well after each addition.

  3. Stir in the milk, crushed Graham crackers, baking powder, and vanilla until combined.

  4. Pour the batter into prepared cake pans and bake at 350°F (175°C) until a toothpick comes out clean.

Fill and assemble

  1. For the filling, mix the confectioners' sugar, cream, and melted butter until smooth.

  2. Spread the filling between the layers of the cooled cake.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with the sugar to trap air and add richness and tender texture.
Eggs
Provide structure and binding, setting the crumb as the cake bakes.
Graham crackers
Supply the cake's toasty, slightly sweet flavour and fine crumb.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Confectioners' sugar
Dissolves into the cream and butter to make a smooth, sweet filling.

The step that matters

Creaming the butter and sugar. Beating until light and fluffy incorporates air that helps the cake rise and gives a fine, even crumb. Under-creaming leaves a dense cake.
