Directions

Make the fudge

  1. Grate the chocolate and mix it with all the ingredients except the vanilla.

  2. Cook slowly, stirring occasionally, until it forms a soft ball when dropped into cold water.

Finish and set

  1. Remove from heat, add vanilla, and beat until it begins to thicken.

  2. Pour into a buttered pan and, when nearly cold, cut into squares.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bitter chocolate
Provides the chocolate flavour and rich body of the fudge.
Sugar
Sweetens the fudge and, as it cooks, helps form its smooth, firm texture.
Karo syrup
Interferes with sugar crystallisation, keeping the fudge smooth rather than grainy.
Milk
Adds moisture and dairy fat, softening the texture of the fudge.
Butter
Adds fat for a richer mouthfeel and a softer, creamier bite.

The step that matters

Beating after removing from heat. Beating while the syrup cools lets sugar crystals form in a controlled way. Beating too early or too late changes whether the fudge sets smooth or grainy.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
