Why Oil Separates Prom Lard

In a lard kettle, combine 100 lbs of water with 4 oz of Lard Purifier.
Add 100 lbs of lard to the water mixture.
Gradually heat the mixture until the lard melts without boiling over.
Stir continuously until the lard is fully melted and washed.
Skim off any scum that rises to the top.
