Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Brown a little suet in a dripping pan.

  3. Add sufficient boiling water and a little coarse sea salt to baste the meat.

  4. Place the roast on a grate or rods across the pan.

  5. Dredge the meat well with flour.

  6. Baste the roast every 15 minutes.

  7. Cover the thin and fatty parts of the beef with bits of paper dipped in gravy to prevent overcooking.

  8. Serve with currant jelly and suitable vegetables like mashed potatoes, turnips, and squash.
