Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Place the beef in a dripping pan without water and cover tightly.

  3. Heat in the oven until hot, then remove and season with salt and pepper.

Finish and serve

  1. Return the beef to the oven uncovered and cook until heated through.

  2. Turn the beef and place small bits of butter rolled in flour on top.

  3. Once the butter is melted, the beef is done.

  4. Cooking should not exceed 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sirloin beef
Forms the main body of the dish and is cooked gently until heated through.
Butter
Melts over the beef, adding richness and moisture to the surface.
Flour
Coats the butter so it stays in small pieces and helps thicken the juices.

The step that matters

Cooking should not exceed 15 minutes. Once the butter has melted the beef is done, and overcooking dries the meat and toughens its fibres, so the time limit protects tenderness.
