Cabbage Pickle

Ingredients

Directions

  1. Cut the cabbage as for slaw.

  2. Boil the cabbage in a mixture of vinegar and water, seasoned with salt, until very tender.

  3. Dry the cabbage in the sun.

  4. In a jar, layer the dried cabbage, sprinkling white mustard seed and celery seed between layers.

  5. Add a layer of sliced onions that have been soaked in brine overnight.

  6. Repeat the layering until all the cabbage is used.

  7. Cover the mixture with sweetened vinegar and add turmeric to achieve a bright yellow color.
