What each ingredient does
- Green tea
- Provides the flavour and the aroma of the infusion, as the leaves release their compounds into the water.
- Boiling water
- Extracts flavour from the tea leaves when poured over them and left to steep.
The step that matters
Steeping the tea for about 10 minutes. Green tea is delicate, and steeping it too long in very hot water draws out more bitter compounds from the leaves, making the cup taste harsh. Timing the steep is what keeps the flavour balanced.
