Why it works: Chicken and pork match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 5,417 recipes. Both carry 2-furfurylthiol, which smells coffee, roasted. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main meat, which becomes tender through slow, moist stewing.
Salt pork
Adds fat and savory flavor to the cooking liquid as it stews.
Butter
Enriches the gravy and combines with flour to form a smooth, rich base.
Flour
Thickens the cooking liquid into a gravy when cooked with butter.

The step that matters

Skim off excess oil before thickening. Fat from the chicken and salt pork floats on the liquid. Removing the excess keeps the gravy from tasting greasy and helps it thicken smoothly.
