Why it works: Chicken and pork match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 5,417 recipes. Both carry 2-furfurylthiol, which smells coffee, roasted. The science ↓

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Clean and cut the chickens into pieces.

  2. Boil the chickens in water just to cover until nearly cooked, skimming the water carefully.

  3. Line a deep dish with a thick pastry made like a baking powder biscuit.

  4. Layer the chicken pieces in the dish, placing those with bones from the center to the edge.

  5. Add the hearts and livers, sprinkle each layer with flour, salt, and pepper.

  6. Top each layer with a thin slice of salt pork or a small piece of butter, adding more seasoning on the top layer.

  7. Pour in enough of the boiling liquid to fill the dish without overflowing.

  8. Roll out the upper crust thicker than for fruit pies, make incisions for steam, and place it over the dish.

  9. Wet the under crust with water to seal the edges tightly.

  10. Bake in a 400°F (200°C) oven until done.
