Roast Veal

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Choose the shoulder, loin, or fillet of veal for roasting.

  3. Baste the veal frequently as it cooks.

  4. When nearly done, baste with melted butter and dredge with flour.

  5. Allow it to brown nicely before removing from the oven.

  6. For gravy, mix flour with the fat in the pan or a little butter, and stir into the drippings.

  7. Serve the gravy in a gravy boat.
