What each ingredient does

Cucumbers
Provide the bulk of the ketchup and release liquid when salted, forming the base.
Onions
Add savory aroma and body to the grated mixture as it stands with salt.
Vinegar
Adds acidity that sharpens the flavor and helps preserve the ketchup.

The step that matters

Salting and standing the grated mixture. Salt draws water out of the grated cucumber and onion through osmosis. Salting thoroughly and allowing the full 5 to 6 hours of standing releases enough liquid, which sets the amount of vinegar you add later.

Swap the onion

How well each one fits the dish's main ingredients (cucumber, vinegar, pepper):

  1. Capsicumfits better
  2. Radishfits better
  3. Mustardfits better
  4. Onionthe original

Fit is the average pairing score against cucumber, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
