Why it works: Milk and potato are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 3,611 recipes. Both carry (e,z)-2,6-nonadienal, which smells cucumber, melon. The science ↓
Salt-rising Bread
Ingredients
Directions
Heat the milk in a pint cup until almost boiling.
Thicken the milk with cornmeal to a mush consistency.
Cover the cup with a sauce plate, wrap it in flannel, and keep it warm overnight.
In the morning, prepare the salt-rising starter as usual.
Add the cornmeal mixture and enough flour to make a stiff dough.
Knead the dough until smooth; the longer you knead, the whiter the bread.
Mix in 1 tablespoon of sugar and optional mashed potatoes for improved flavor.
