What each ingredient does

Currants
Provide the fruit juice that sets into the jelly's base flavor and body.
Sugar
Adds sweetness and helps the juice set into a firm, spreadable gel when boiled.

The step that matters

Boiling until it jellies. Boiling concentrates the juice and sugar until enough pectin and acid can form a gel. Undercooking leaves it runny, while overcooking can make it stiff and dull in flavor.
