What each ingredient does

Brown coffee
Provides the main coffee flavour and colour of the brew.
Beaten egg
Helps clarify the coffee by binding fine grounds as it heats, so they settle out.

The step that matters

Let it boil for 10 minutes. The egg must cook into the liquid to bind the grounds, and the coffee must not be left boiling longer than stated, or it turns bitter and over-extracted.
