Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites form the shell that holds the filling, and yolks give the filling its body.
Potted or deviled ham
Adds savory flavor and salt to the mashed yolk filling.
Butter
Adds richness and a smoother, softer texture to the yolk filling.
Buttered crumbs
Form a crisp, golden browned coating when baked.

The step that matters

Bake or fry until the crumbs are golden. Crumbs brown through the Maillard reaction at high surface heat. Too little heat leaves them pale and soft, while overcooking dries the filling and toughens the coating.

Swap the tomato

How well each one fits the dish's main ingredients (egg, butter, onion, ham, sauce, parsley):

  1. Shallotfits better
  2. Chivefits better
  3. Leekfits better
  4. Tomatothe original

Fit is the average pairing score against egg, butter, onion, ham, sauce, parsley. Candidates are from the same food group and used in at least 100 recipes.
