To Bake Fish

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Rub the fish inside and out with coarse sea salt, black pepper, and a small amount of cayenne pepper.

  2. Prepare a stuffing with the cubed bread, seasoned with pepper, salt, and thyme or parsley.

  3. Stuff the fish and sew it closed or tie it with string.

Bake and serve

  1. Place the fish in a pan and add 1 pint of water.

  2. Sprinkle the fish with flour and add some butter on top.

  3. Baste the fish well and bake at 300°F (150°C) for one and a half hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whole fish
Forms the main body of the dish and carries the stuffing while it cooks.
Cubed bread
Makes the stuffing, soaking up juices and adding a soft, moist texture inside the fish.
Butter
Adds fat for richness and helps the surface brown and stay moist while basting.
Flour
Sprinkled on the fish to help form a light, browned crust on the surface.

The step that matters

Baste the fish well. Basting spreads the butter and pan liquid over the surface, keeping the flesh moist during the long bake and helping the skin brown evenly.

Swap the thyme

How well each one fits the dish's main ingredients (fish, pepper, bread, flour, butter):

  1. Parsleyfits better
  2. Capersfits better
  3. Nutmegfits about as well
  4. Thymethe original

Fit is the average pairing score against fish, pepper, bread, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
