Ingredients

Directions

Prepare

  1. Beat the steak well.

  2. Mix the mace, cloves, thyme, pepper, salt, and bread crumbs, reserving 2 tablespoons for gravy.

  3. Spread the mixture over the steak, roll it up, and tie it at each end and in the center.

Cook and make gravy

  1. Place the rolled steak in a pan and add enough water to prevent burning.

  2. Add the butter to the pan.

  3. Cook in the oven, basting frequently.

  4. Once done, thicken the gravy with the reserved bread crumbs and adjust seasoning with pepper and salt.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Absorb the meat juices and add body to the stuffing, helping it hold together inside the roll.
Beef steak
Forms the outer wrap around the stuffing and provides the main meat flavor and texture.
Butter
Adds richness and fat to the pan, helping the meat brown and the drippings taste fuller.

The step that matters

Tying the roll. If the steak is not tied firmly at each end and in the center, the stuffing can leak out during cooking and the roll may unravel, so the filling may not stay evenly enclosed.

Swap the mace

How well each one fits the dish's main ingredients (clove, thyme, pepper, bread, beef, butter):

  1. Marjoramfits better
  2. Winter savoryfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against clove, thyme, pepper, bread, beef, butter. Candidates are from the same food group and used in at least 100 recipes.
