What each ingredient does

Cucumbers
Make up the bulk of the pickle and provide its crisp, fresh texture.
Green tomatoes
Add firm body and a tart flavour that holds its shape in the pickle.
Vinegar
Preserves the pickle and supplies the sharp acidity that defines it.
Brown sugar
Balances the vinegar's sharpness with sweetness and a deeper, molasses-like flavour.
White mustard seed
Contributes pungent flavour and a sharp, mustardy bite to the pickle.

The step that matters

Pressing the salted vegetables dry. Salt draws water out of the vegetables overnight. If they are not pressed dry, the excess liquid dilutes the vinegar and the pickle can turn soft and watery.
