Transparent Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the pudding

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix 6 egg yolks with sugar, butter, and wine until smooth. Add grated nutmeg and mix well.

  3. In a separate bowl, whip the 3 egg whites to form a meringue.

  4. Fold the meringue into the pudding mixture gently.

Bake and finish

  1. Pour the mixture into a baking dish and bake until set.

  2. Once baked and cooled, spread icing on top and brown it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and set the custard, while whipped whites add lightness and structure.
Sugar
Sweetens the pudding and helps give the baked texture its tender body.
Butter
Adds fat for richness and a smooth, moist crumb.
Wine
Adds moisture and a subtle acidity and aroma to the mixture.

The step that matters

Folding the meringue into the pudding mixture. Folding gently keeps the air trapped in the whipped egg whites. Overmixing deflates the foam, which makes the baked pudding denser and less light.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sugar, butter, wine):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Tarragonfits less well
  4. Thymefits less well

Fit is the average pairing score against egg, sugar, butter, wine. Candidates are from the same food group and used in at least 100 recipes.
