Cocoanut Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cream together the sugar and butter until light and fluffy.

  3. Add the egg whites and mix well.

Make the batter

  1. In a separate bowl, combine the flour, baking soda, and cream of tartar.

  2. Gradually add the dry ingredients to the wet mixture, alternating with the milk.

  3. Fold in the grated coconut and add flavoring to taste.

Bake

  1. Pour the batter into a greased cake pan and bake for 30-40 minutes or until a toothpick comes out clean.

What each ingredient does

Butter
Creams with the sugar to trap air and give the cake a tender, rich crumb.
Egg whites
Add structure and lift to the batter as they set in the oven.
Flour
Forms the main structure of the cake as its proteins set during baking.
Baking soda
Reacts with the acid in the recipe to produce gas that helps the cake rise.
Cream of tartar
Acidic ingredient that reacts with the baking soda and stabilizes the egg whites.
Milk
Adds moisture and helps form a smooth, pourable batter.

The step that matters

Gradually add the dry ingredients to the wet mixture, alternating with the milk.. Adding flour in portions alternating with liquid keeps the batter smooth and limits gluten development, which helps prevent a tough or dense cake.
