What each ingredient does

Egg whites
Whipped into foam, they add a light, airy texture to the frozen lemonade.
Sugar
Sweetens the egg whites and helps stabilise their whipped foam.
Jamaica rum
Adds flavour and keeps the ice from freezing rock-hard, since alcohol lowers the freezing point.

The step that matters

Adding the rum near the end of freezing. Alcohol lowers the freezing point, so adding rum too early can stop the mixture from freezing properly. Adding it when the mixture is almost firm lets it blend in while keeping a softer, scoopable texture.
