What each ingredient does

Strawberries
Provide the fruit flavour and the body of the preserves.
Sugar
Draws water out of the fruit to form syrup and preserves the fruit through its sweetness.

The step that matters

Boiling the syrup after the strawberries are removed. Continued boiling thickens the syrup as water evaporates and sugar concentrates. Stopping too early leaves a thin syrup that may not set, while boiling too long can make it overly stiff.
