What each ingredient does

Oatmeal
Forms the body of the porridge as its starch thickens into a mush when boiled.
Boiling water
Hydrates the oatmeal and carries it into a thick, spoonable consistency as it cooks.

The step that matters

Stirring as the mush thickens. As the starch gelatinizes and the mixture thickens, it can scorch on the bottom and stick. Stirring constantly and adding water when needed keeps the texture smooth and even.
