What each ingredient does

Cooked chicken
Forms the bulk of the salad and provides its main texture.
Egg yolks
Mashed with oil to form a thick, emulsified base for the dressing.
Sweet oil
Adds richness and moisture, carrying the flavour of the dressing.
Vinegar
Adds acidity that brightens the dressing and balances the richness of the oil.
French mustard
Adds sharp flavour and helps the egg and oil hold together as an emulsion.
Celery
Adds crisp texture and a fresh, mild flavour to the salad.

The step that matters

Mashing the egg yolks into a paste with the oil. Yolks are the emulsifier here. Mashing them thoroughly before adding the oil and vinegar helps the dressing stay smooth and creamy rather than separating into greasy droplets.

Swap the celery

How well each one fits the dish's main ingredients (chicken, mustard, egg, vinegar, pepper):

  1. Tarragonfits better
  2. Dillfits better
  3. Capersfits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, mustard, egg, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
